Easy Summer Dinners 2

You need this in your life.  Especially if you hate on shrimp (ahem, Missy.) It’s time for episode two of my easy summer dinners that are healthy and made of something called real food.

That chicken is pretty dang fabulous.  It’s my awesome Mustard Basil Chicken and it’s too easy to make.

Here’s what you need:

1.5-3lbs of fresh chicken tenders (the amount depends on how big your herd is.)

1/3 cup of dijon mustard

1/3 cup of basil

1/3 cup EVOO

1/3 cup white wine vinegar

salt and pepper to your liking

In a food processor process your basil leaves for about three minutes.  Add in the other ingredients and create a nice marinade.

In a dish place your chicken and then pour the marinade all over it.  Cover and refrigerate for twenty-four hours.

After you have let it marinate remove the tenders and cook by picking from these two options:

  1.  Grill
  2. Cook on the stove top in lightly sprayed sautee pan. (This is how I prepared ours!)

The flavor is amazing.  It’s good my kids said, “It’s too good, mama!”  So yeah I gladly pass this along to you!

  1. You would be so proud of me! Last night we had grilled pork tenderloin, sautéed summer squash, and cauliflower rice. But of course, I ate too much. The verdict is still out on the rice, though.

    1. I am beaming with joy, girl. I think that making cauli rice on your own is WAY better than the freezer stuff. I will send you a recipe. It’s super duper easy and takes maybe ten minutes. My husband prefers it homemade rather than from a package.
