Healthy Girl: Rise & Shine

You look hungry.

Here’s my favorite tiny to no carb breakfast casserole to make on Sunday or Monday for the entire week.  It keeps me satiated and going strong through busy days.  (You should still eat some lunch!)

I pair it with a little fruit or veggies depending on what my taste buds are craving.

Ingredients: 

6 eggs just beat them

1 1/4 cups of milk of your choice (cow, nut, bean, or fruit)

Sausage of your choosing cooked and crumbled

1/2 cup of sharp cheddar cheese

Salt and pepper for taste.

Instructions:

Preheat your oven to 350 degrees.

Spray an 9×9 baking pan with nonstick oil.

In a large bowl combine your eggs and milk with salt and pepper.

In the baking pan pour in just enough of your egg mixture to cover the bottom.  Next up put your sausage in the baking pan spread as evenly as possible, cheese is up next, use the remainder of the egg mixture to cover the sausage and cheese.

Bake for twenty-five minutes.

Small portions go a long way with this dish.  A little bit will do the trick to fill your tank.

Try to steer clear of empty breakfast options like donuts, cereals, and prepackaged freezer fare.  Breakfast should be complex carbs, smart fat (omegas) and protein!  This week I challenge you to give your breakfast a make over!
