Instant Pot – Recipes

Hey friends – it’s time to talk food.

More specifically – recipes for your Instant Pot.

I have a friend who is so sick of me talking about my IP that she interjects it into our conversations to make fun of me.  I’m laughing too so we’re all good!

True fall weather came in last week and it has stuck around.  We’re having highs in the 40s some days and in the 50s for others.  That means I just want to make soups, stews, and chowders.  (Down here we say it as it is spelled but my favorite chowder is pronounced chow-dah…we will get to that.)

Actually, we will get to that right this moment.

The first and my most favorite chowder is the one that reminds me of Brady, Gronk, Edelman, White, Amendola, and all the other amazing Patriots.

New England Clam Chowder

I don’t want to take credit for the recipe.  I used the one that came with my IP and it was pretty damn amazing.  Here is the link to the e version should you so choose to try it.  The changes I made included:

Reducing my clam juice – I used one cup of clam juice and one cup of water.

Reducing my potatoes – I try to stay away from potatoes so I only used one (diced to the hilt!)

No pork bacon – I used turkey bacon!

My kids loved this so much.  My husband and self devoured it like animals.

Next up is Corn Chowder!

This recipe I used from the Crunchy Creamy Sweet.   It was a winner, winner, corn chowder dinner.  (Yeah. that was lame.)

Substitutions for this one:

I didn’t use the total amount of potatoes the recipe called for.  Instead I used two and it was enough!

And it rocked out.

Next week I’m going out on a limb and doing some alternative style food since we’re entering the holiday season.  You know we love holiday food but we need to change it up as well.

Can I just say that the IP folks say that this method of cooking is healthier and if you make the right substitutions they are exactly right!  Let’s try to remember to be healthy during the next seven weeks!!!
